Garlicky Greek Chicken

Garlicky Greek Chicken 

My family loves Greek and Mediterranean food.  Not only does it taste delicious, but most of it is gluten-free. A big plus is our house. And it really isn't that difficult to prepare.

This particular recipe is just delicious - tangy lemon and garlic mixed together - and easy to make.

Ingredients:

5 lbs. chicken fryer parts (legs and thighs..it works best with dark meat)
2/3 cup minced garlic (either fresh or from the jar)
1/2 cup lemon juice
1/4 cup olive oil
2 1/2 tbsp dried oregano
2 tbsp black pepper
1 tbsp salt
1/4 cup chopped parsley

To Prepare:

1. Preheat oven to 375-degrees

2. Combine the minced garlic, lemon juice, olive oil, oregano, salt and pepper in a bowl and stir well. Coat the chicken pieces evenly and arrange in a large baking pan.

3. Bake for about 50 minutes or until chicken is done.


Serve with your choice of sides.
